Easy Bread

This bread has been essential for our family.  It's super fast and works great in so many applications.
I have used round miniature casserole dishes to make round bread like an english muffin or hamburger bun.  Also small rectangle pyrex glass pans to create more square bread.  The difference is how you would cut it.  The rectangle, you would just cut in half on the short side.  The round, you will cut in half width wise to make the slices.  The key is to use whatever container that's glass and that has sides that are straight up and down so that slices are even on the sides (round is more important for this).  So no coffee mugs or cereal bowls for this application.  This is made in the microwave, super quickly.  I usually use 2 of the same type of container so that I can be preparing one while the other is in the microwave.

For each:
2 tbl heavy cream
1 large egg
1/8 cup shredded cheese (I have a scoop that was originally for coffee that is 1/8 cup, works perfectly) - up to your preference on which type - I often use a mexican blend for savory, a white cheese for sweet.
1/4 cup almond flour
1/4 tsp cream of tartar
1/4 tsp baking soda
(or replace baking soda and cream of tartar with 1/2 tsp baking powder- I just avoid that due to the corn starch)
Seasonings to taste.  I usually use a dash of pepper and Adobo for savory.  If you are going for sweet you could add cinnamon and raisins and maybe some Pyure stevia.  Or whatever you think sounds good.

Whisk all with a fork.  Spray coconut oil cooking spray in the dish before pouring.  Microwave for 1 minute 45 second (microwaves vary, so you may need to adjust).

Turn out onto a silicone mat.  Allow to cool.

After you'd made as many as you want.  Slice each into 2 slices.  Either width wise for round or on the short side for the rectangle.

Using a skillet with coconut oil cooking spray (or butter), Grill until golden on both sides.

They are now ready to enjoy as a sandwich, egg muffin breakfast sandwich, hamburger bun, breakfast 'bagel' with cream cheese, etc.  Anything you'd use 2 slices of bread for.  Enjoy!
