Tortillas

These are grain free and less than 4g net carbs each. 


1 tablespoon butter melted
2 eggs
2 tablespoons warm water
Dash salt
1/4 cup each- plantain (20g net carbs) and white sweet potato (16g net carb) flour (I get both from Barry Farms)


These tortillas are not as low carb as some of my dishes, but it makes about 10, 7" tortillas, so it's about 3.6g net carbs each- that's not so bad. 

Spray a 7" skillet with nonstick spray. 

Mix everything together. Should be very pourable dough. 

Pour batter like making crepes (pour in center and turn the pan to spread out the dough). 

Heat to about medium. 


Cook until edges are dry then flip. 
Place on paper towel to cool while you cook the rest. Let them cook to lightly brown- not too brown so they are still foldable.
