Flourless Chocolate Mug Cake

This is very low sugar and SUPER fast!

1/4-1/3 cup mini unsweet/semi-sweet (preference) chocolate chips
2 tbls butter

Melt in microwave in a coffee type mug. Just enough time to melt, perhaps about 30-60 seconds- chocolate burns easily in the microwave.

1 egg
1/2 tsp vanilla
1 1/2 tbl xylitol
1/2 tbl pyure
1/2 tbl cocoa powder

 Blend in bullet style blender for 2-3 minutes, until fluffy. Mix into the slightly cooled chocolate-butter mixture.
 Pour into 2 mugs if making for little people. Will be about a 1/4-1/3 of a mug. (This stuff is RICH, it will be more than enough for a serving).
If making for a big person, maybe just leave as one. But it is very rich.

 Microwave for 2-5 minutes, depending on how powerful the microwave is. Cook until the top is firm. Better to under cook than over cook. A dry cake isn't as good as an extra gooey cake.

 Scoop a spoon of sugar free raspberry preserves on top and enjoy! I get Natures Hollow because it does not have artificial sweeteners, it just uses xylitol. Or slice fresh berries on top!
