Butter Toffee Popcorn

Dairy/sugar/grain/peanut free (like poppycock)

This is a great knockoff recipe for those of us who don't eat corn, sugar or dairy!
  • 1/4 cup pyure
  • 3/4 cup xylitol
  • 1/2 cup coconut cream (cream in a can, not coconut milk- I get mine at sprouts)
  • 2 tsp vanilla
  • 2 tsp butter extract
  • Dash sea salt
  • Salted Cashews
  • Puffed lotus seeds (found at Indian grocery, called Phool Makhana)

Cook lotus seed dry in oven at about 300 until crispy

Cook wet on medium and higher heat (back and forth) until thick. Should be caramel color. Stir with bamboo spoon often.

Toss all together
Spread on wax paper
Sprinkle sea salt

Let cool
