Blueberry Muffins

Sugar/grain/starch/dairy free!!  These were the second favorites of the season!

Heaping cup almond flour
1/2 cup coconut flour
3 tablespoons Pyure organic stevia blend
Heaping 1/4 cup xylitol
1 tsp baking soda
1/2 tsp cream of Tatar
Dash salt
Cinnamon to taste

1/4 cup melted coconut oil
1 tablespoon water
2 eggs
1 tablespoon lemon juice
2 tsp vanilla

1/2 -1 cup blueberries thawed and drained, depending on preference

Preheat convect @325
Mix dry
Blend wet in bullet style blender until frothy
Fold in wet and berries

Put in silicone cupcake holders - makes 12 muffins. D

Bake for 20-30 minutes, turning halfway through

After 10 minutes turn out onto rack.
